Golden Cupcakes with Raspberry Cream Cheese Frosting
Golden Cupcakes
Ingredients:
3 cups cake flour, sifted
2 ½ teaspoons baking powder
½ teaspoon salt
2/3 cup butter
1 ¾ cups white sugar
2 eggs
1 ½ teaspoons vanilla extract
1 ¼ cups milk
Directions:
1. Preheat the oven to 350-degrees and add liners to (2) muffin pans.
2. In a large mixing bowl, sift the flour. Whisk in the baking powder and salt and set aside.
3. In a smaller mixing bowl, cream the butter and sugar until light and fluffy. Beat in the eggs and vanilla and mix well.
4. Alternating, slow add the dry ingredients and milk. Beat until the batter is smooth. Evenly fill each of the muffin liners two-thirds of the way full.
5. Bake 20-25 minutes or until a tester comes out clean.
6. Cool for 10 minutes in the pan before turning out to cool completely.
Raspberry Cream Cheese Frosting
Ingredients:
3 cups powdered sugar
1/2 cup butter
1/2 cup cream cheese
1 teaspoon raspberry extract
1-2 tablespoons milk
Red food coloring
Fresh raspberries for garnishing
Directions:
1. Whisk together the sugar, raspberry extract, cream cheese and butter, adding the milk as needed. Beat for about 3 minutes until fluffy and thick.
2. Add 3-4 drops of red food coloring and mix until the color is well combined. If you want the frosting to be darker, add more food coloring.
3. When the cupcakes are completely cooled, spoon the frosting into a piping bag and decorate as desired. Garnish with fresh raspberries if you like.
