How to make mango ice cream
When it comes to ice cream, fresh mangoes can take your dessert to a whole new level. They add a unique texture in addition to a natural sweetness that can’t be beat. Here is a fun and easy recipe that anyone can put together with an ice cream maker and some fresh mangoes.
- 5-6 fresh mangoes
- 1 cup whole milk
- pint of heavy cream
- 1 tablespoon fresh lemon juice
- 2 tablespoons light corn syrup
- 1/4 teaspoon vanilla
- 3 large egg yolks
- 1/2 cup sugar
Finding your mangoes – this is the most important step, and it’s worthwhile to find the best quality mangoes available. You can opt for mangoes in a can, but they just don’t taste the same.
In some cases, they don’t even taste like mangoes! They have more of a peachy flavor and texture that results in something different. Try to find mangoes that are ripe without being too stringy (unless you like that).
You’ll need an ice cream maker for this and I linked one below I’ve used before. I purchased it on Amazon.

1. Your first step is to make a Mango purée. Cut your mangoes into small chunks and then drop them into a blender. Add your corn syrup, lemon juice, and vanilla, and give it a few blasts. The ideal purée should be a little bit chunky but smooth enough to blend easily with your main custard.
2. In a heavy saucepan, simmer your milk and heavy cream.
3. In a separate bowl, whisk together your eggs and sugar.
4. Add your milk/cream mixture gradually into your egg/sugar mix and whisk to blend thoroughly.
5. Add everything back into your saucepan and cook over medium heat until it thickens. This usually takes around 5 minutes for the custard to be thick enough to coat a metal spoon.
6. Add everything together (your custard and purée) and mix. Let it cool in your fridge for about one hour.
7. Pour everything into your ice cream maker, and let it churn according to your manufacturer’s specifications – usually 25-30 minutes.
8. When your ice cream is done, you can enjoy it right from the machine, or return it to your freezer to harden up.
The great thing about Mango ice cream is its overall versatility. You can enjoy it on its own, or combine it with a wide range of fresh fruit. You can even serve it alongside fresh slices of mango or rings of grilled pineapple for a perfect summer dessert.

I absolutely love mango ice cream! I usually make it as sorbet however, since you can take advantage a bit more of the fruit taste. Best part is that if you use ripe mangoes you don’t really need much sugar!
